However, I wouldn't say it's grammatically incorrect as I remember I saw 'but' was used like that on a textbook that I read in school back then.

Saying 'But of course' is not usual. That sounds strange to me. Because 'of course' is of course. It's 100%. There is no need to be emphasized anymore. Just saying 'of course' is totally enough. "The horse is but fast" sounds strange as well. If you want to emphasize the word 'fast', "The horse is indeed fast" would be usual and natural.
